4 Cheese White Wine Pasta with Bacon
This is a delicious quick version of mac & cheese. You can make it as a side or as the main course.
Ingredients:
- 16 ozs Pasta of your choice (Elbow, Rotini, etc)
- 1/2 cup shredded gouda cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded swiss cheese
- 1/2 cup shredded parmesan cheese
- 4 - 6 slices of cooked bacon (optional)
- 1/2 cup Stella Rosa white wine (or semi-sweet white wine of your choice)
- 1/2 to 1 cup milk
- 1/2 to 1 cup chicken stock
- 2 tbsp butter
- 2 tbsp flour
- 1 tsp dijon mustard
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp parsley (optional)
Instructions:
- Preheat oven to 350 degrees
- Prepare the pasta according to the package.
- Cook the bacon then slice it into pieces and set aside
- Melt butter in a sauce pan
- Once butter is melted add flour and whisk until the butter flour mixture is smooth
- Slowly whisk in milk, chicken stock and wine and continue to whisk until the mixture has thickened
- Add dijon mustard, salt, pepper, garlic powder, cayenne pepper, parsley
- Add most of the shredded cheeses (leave some to top the pasta for baking) and whisk until the mixture has a smooth creamy consistency
- Add the bacon pieces to the cheese mixture
- Before you drain your pasta add 4 tbsp of the boiling pasta water to the cheese mixture
- Drain the pasta then add it to a baking dish
- Slowly pour the cheese/bacon mixture over the pasta and stir it together well
- Serve with a glass of Stella Rosa Platinum & Enjoy!
Optional Steps For Baking:
- Place the remaining cheese on top and bake in the oven until the cheese is melted
- Remove from oven and allow to cool
