4 Cheese White Wine Pasta with Bacon




This is a delicious quick version of mac & cheese.  You can make it as a side or as the main course.


Ingredients: 

  • 16 ozs Pasta of your choice (Elbow, Rotini, etc)
  • 1/2 cup shredded gouda cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded swiss cheese
  • 1/2 cup shredded parmesan cheese
  • 4 - 6 slices of cooked bacon (optional)
  • 1/2 cup Stella Rosa white wine (or semi-sweet white wine of your choice) 
  • 1/2 to 1 cup milk
  • 1/2 to 1 cup chicken stock
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp dijon mustard
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp parsley (optional)

Instructions:

  1. Preheat oven to 350 degrees
  2. Prepare the pasta according to the package.
  3. Cook the bacon then slice it into pieces and set aside
  4. Melt butter in a sauce pan
  5. Once butter is melted add flour and whisk until the butter flour mixture is smooth
  6. Slowly whisk in milk, chicken stock and wine and continue to whisk until the mixture has thickened
  7. Add dijon mustard, salt, pepper, garlic powder, cayenne pepper, parsley
  8. Add most of the shredded cheeses (leave some to top the pasta for baking) and whisk until the mixture has a smooth creamy consistency
  9. Add the bacon pieces to the cheese mixture
  10. Before you drain your pasta add 4 tbsp of the boiling pasta water to the cheese mixture
  11. Drain the pasta then add it to a baking dish
  12. Slowly pour the cheese/bacon mixture over the pasta and stir it together well 
  13. Serve with a glass of Stella Rosa Platinum & Enjoy!
Optional Steps For Baking:
  1. Place the remaining cheese on top and bake in the oven until the cheese is melted
  2. Remove from oven and allow to cool
  3. Serve with a glass of Stella Rosa Platinum & Enjoy!
